Update MCP setup so it connects to an existing MATLAB instance

Use Case

The MATLAB MCP server can now connect to an open instance of MATLAB, but the setup for this toolkit doesn't have the option turned on by default.

Consider adding this option to match the setup process for the Simulink Agentic Toolkit.

Proposed Behavior

For MCP setup, include the argument --matlab-session-mode=existing so AI agents will connect to an open MATLAB instance
