It looks like `docs.esp-rs.org` is unsued domain now. This PR changes it to `https://docs.espressif.com/projects/rust/book/`. Also, updated to use `esp-generate` to generate a project. Ref: https://docs.espressif.com/projects/rust/book/getting-started/using-esp-generate.html
